The hospitality sector has seen a dramatic change in customer behaviour off the back of COVID. People now spend more time at home and the increased cost of living has meant they are more intentional when they do go out to eat. Giuseppe knew that if he wanted Symposium to thrive, he would have to alter the restaurant’s offering.
